Alaska pollock is the best fish for surimi, and it isn't close at commercial scale. The reasons stack: its flesh is white enough to dye any color, mild enough to flavor any direction, rich in the myofibrillar proteins that form surimi's signature elastic gel, low in the fats that turn pastes rancid — and it swims in the Bering Sea in one of the largest, best-managed fish stocks on the planet. What makes a fish good at becoming surimi

Surimi quality is gel quality. When washed fish proteins are salted and heated, they cross-link into a network — the bounce of a crab stick is that network's strength (the process, step by step). A surimi fish therefore needs:

  • White, low-fat flesh — fat weakens the gel, shortens frozen shelf life, and tints the paste;
  • Mild flavor, since the washing removes most but not all of the fish's character;

Blending is standard practice: a premium stick might be mostly pollock with itoyori in support, while budget products lean the other way. The label usually just says "fish protein" or names the leading species.

What "SA grade" means on a surimi block

Commercial surimi trades in letter grades — SA at the top, then A, AA conventions, FA, and down through KA and RA — scored on gel strength, whiteness, moisture, and impurities. SA-grade pollock surimi is the premium raw material that firms like Kibun and Osaki buy for their best kanikama; lower grades go to fish balls, fried cakes, and budget sticks where whiteness and elasticity matter less.
